Hey Stone_Monkey, I'm Solace :) Its so nice to read your posts and take inspiration and motivation from your achievements and even though I dont know you and you dont know me but after having read your posts on this thread I feel so proud of you that you have beaten your Diabetes ! I think this is so amazing, its like following a character in a book and to read about such an achievement is so heartwarming, well done indeed , and I simply wanted to post today to send the biggest of congratulations to you :)

Ps I noticed you posted a 4 HOUR (eek!) recipe for a vegetable curry , might I suggest a much quicker and no compromise alternative ?

Thanks for your kind words. I was thinking I was talking too much in my posts and maybe stretching too far off topic. But I do think all the areas are linked.

We just need to get others to come back even if it's just to say 'I'm still here'.

It would be great to get your recipe on here. My one does take a while. I just like messing around in the kitchen and trying new things and that was something I though would taste good. I'd love to try your recipe. Especially since it will be a fair bit quicker - so please post :)

Well I've just packed for a big bus trip. I've made my sarnies for lunch and a pasta for tea. My flask is ready to fill in the morning. Then it's full steam ahead at 8am :-)

Hi everyone,

I just though I'd share my news. I'm mid trip today. I came to Leicester. Today I ran the Leicester Marathon. My time was 5hr30min33sec. It was not a bad time being my first marathon. I jogged aprox 23miles and walk 3miles. I found out my trainers are okay for half marathons but useless for full marathons. So, I'll have to spend some cash on new runers. My next challenge is to bring my marathon time down by 1 hour.

I may have lost some weight today - I wonder why :) I survived on bananas through my run and a snickers bar - top nutrition for a top athlete :-) I then went to the shops and b*ght choc digestives - they were awesome - ha ha..

Never mind this thread, I haven't been on FMUK much recently. Apart from the usual (work and theatre), I might have bagged myself a new fella. ;) Not the reason for losing weight but definitely a side effect - everyone has commented on how much more confident I seem.

Many congratulations on the marathon, stone_monkey. What a fabulous achievement! Also really pleased to hear about your good health. o/

Gosh, great news on your nhealth and marathon running stonemonkey. Asamaic, you really deserve a reward for your hard work and workouts. Well, I have been missing from the thread for a while but today I refused the offer of a cooked breakfast and went for the tropical fruit and yoghurt option! Very proud of myself.
Looks like my job will be myex-job soon. I knew it would happen as I have come to the end of my sick leave. Still no sign of a positive outcome for the foot, just waiting for it to get better on its own".......... consultant gave me some krypton factor strapping as a result of me bursting into tears! Still coming to terms with the situation. The silver lining. ?....Edinburgh now looks bookable;))

Quick and Easy Vegetable Curry

We can name this one the Stone Monkey Curry :D :D


First of all you will need a WOK , yes a wok. Its the best for cooking this method.

You will also need from your local supermarket frozen garlic and ginger, they come in cubes and will be found in the asian section in the freezer area , normally they stock a brand called TAJ. IF you cant find this (unlikely as i've seen them everywhere) then you can get a jar of garlic paste and ginger paste, and if you cant find that then a table spoon of chopped fresh garlic and a table spoon of chopped ginger (this will add more to preparation time due to peeling etc however I find zapping them in microwave for a few seconds makes peeling garlic sooooo much easier )

In addition you will need to b*y a packet of pre fried onions (this is where the real easy in this recipe comes in ) pre fried onions you will need to go to asian grocers for this , most nearly all asian grocers will sell this, 99p usually and will last you for at least 4-5 curries

So


Heat some oil in the wok and 1 cube of garlic and 1 cube of ginger ( or 1 tablespoon each of the paste or 1 table spoon each of the freshly chopped)

Let that fry until golden then add 2 table spoons of tomato puree, fry off adding little bit of water to help the mixing of the garlic ginger and tomato

Once its blended and mixed together nicely (should be couple of minutes max , in fact less than this) add the spices , 1 tea spoon chilli powder, 1 teaspoon coriander powder, 1 teaspoon cumin powder, half teaspoon turmeric powder . Let the mix fry and please make sure doesnt burn, once its fried off together and blended well, add 1 cup of water and give it a good stir, if you want a thicker sauce then use half cup of water. Now add to this a good handful of the pre fried onions and stir it all in , if you used half cup of water then depending on how much onion you put it you may need to add more water , once this is all stirred in and is boiling away , reduce the heat and add your vegetables of choice, right now i'm in to aubergine, courgette and carrots , the easiest method is to b*y a frozen mix veg packet of your choice and add this in (I would say about a third or half a kg , they usually come in packs of 1 kg so should be easy to work out) now add salt according to taste (1 teaspoon for me) and crack some black pepper into this mix. Let the curry cook away until veg are cooked through , remember the sauce will keep reducing so add more water if you need, just keep it at the consistency that you desire. Once done, switch off the heat and add 1 teaspoon of garam masala powder and stir that in . Garam masala powder must go in at the end for curry, this is a tip you should remember when making any curry , never cook garam masala in with the curry , always add it in the end .

If you want to add a bit of magic to this curry then garnish with 1 tablespoon of dried fenugreek leaves (supermarket asian aisle) , not only does this taste out of this world in curry it also has immense medical properties :)

There you have it , real quick, should be all done in 10-12 mins :)

Wow SOLACE, that is certainly a speedy curry. I like the name o/ I shall give it a try when I do my next veg shop.

Fridge is stacked ready for veggie and salad meals as is my pathetic little freezer box with my turkey chilli's and chicken curries (you'd love it SOLACE - you thought my vegetable curry to a while - my chicken curry takes two days to prepare - lol)..

Well i weighed in today at 91kg (14 st 4 pounds - :wall: :wall: ). I have been vegging out since my marathon, no exercise and lots of food :daisy: I have been doing my OU studies which sometimes puts an end to my exercise regime from time to time. But yesterday, I donned my winter running kit and did two 4km runs. One to my volunteering and another home - taking in a hill or two and carrying a packed rucksack on my back - very unusal for me but more to come. Today I did a 14km run which i was happy with along the local canal towpath to the city limits and then a meandering crawl back home again - very enjoyable :smile_anim:

My target for this year has been reached in the distances I have run 5km to a marathon. So, just to take it easy my next challenge has been set and pa*d for. I am going to do an ultra marathon in April 2015 - a meagre 52 miles (84 kms). After spending the last four months on a treadmill to strengthen my legs, ankles and feet it is time to hit the road - hard and gain some leather soled feet :D Starting in Feb 2015 I am planning twelve marathons by the end of the year, adding a couple of small ultra's in there for good measure. I am enjoying the challenges and just want to see how far I can push myself - gently though. Nothing like Eddie Izzard and co doing marathon after marathon in days - that's just too much :nono:

Anyway, this should help me shed a few pounds along the way and I'll let you know how I get on :D

Haggis, neeps and tatties for tea tonight. I it's a nice warming, filling meal for a dark wet chilly evening.

Speaking from experience I have made loads of Solace's recipes even taught my friend (who is Indian ) how to make it Solace's curries and she loves them.

I've still got to make yours stone_monkey - my Mother turned up with beef stew for me the day I was supposed to make it so still have my spices at the ready. 12 marathons 8O 8O 8O that will take some stamina!! I'm mega impressed o/
