Well, i thought i would post another recipe today, ive been meaning to post this one all week actually, finally have some time now to write it out, just back from the gym , having the morning off from work , sort of !
So the recipe today is for pan fried salmon with aubergine and green beans in masala sauce served with garlic roasted new potatoes
This is perfect for a Friday night healthy treat meal, its also a perfect meal to cook if your planning on cooking for a romantic dinner for two

I've chosen Salmon because Mrs Moviemannn loves salmon, but it also works with chicken , steak and perfectly with Quorn too for the vegetarians out there :) (Eumenides where are you ??? I thought you said this was going to be new spiritual home?? !)
So to begin, toss the new potatoes in olive oil, crushed garlic and salt and stick them in the oven.
Now, marinate the fillet of Salmon (or whatever your using) in olive oil, lime (or lemon) juice , salt and pepper , and put it in the fridge to marinate while we start on the masala veg.
In a pan , heat up some olive oil ( use olive oil its better for this than the corn or sunflower oils) and add half a diced onion. Let that turn golden then add 1 cube of crushed garlic (no ginger) , fry until all is light brown, then dice up 2 whole fresh tomatoes and add these in (fresh tomatoes this time not puree or tin) keep stirring until all comes together nicely and add half teaspoon of chilli powder, 1 teaspoon of ground coriander powder and a quarter teaspoon of turmeric powder. because of the fresh tomatoes this mixture should not be sticking, but if for any reason it does start to stick then add little bits of water at a time. What we dont want is runny curry , especially those cooking for a romantic meal (

) as a runny curry will spoil your plate , we want a nice thick sauce thats stays put and doesnt run all over the plate making the whole plate of food look messy ( i have come to learn that its the little things like this that count ! :) )
so once the spices are in , stir (add water as above if needed) and let it all come together, in the meantime quickly chop half an aubergine into large diced chunks and whack these into the sauce before the aubergine notoriously starts getting dark spots in literally seconds! Add the green beans . Add salt (about a teaspoon) to season the whole thing, and crack a good amount of black pepper into the mix too, give this a final stir and final glug of water only if needed then cover the pot and let it cook for about 10-15 mins until the veg are done. If its gone too runny and your in despair of ruining your date then never fear , just dont cover the pot and let it cook without the lid until its reaches a good consistency, however its very prefferable that you dont let it get to the runny stage as better to cook the dish with the lid on so that the veg tenderise nicely.
So we have about 10-15 mins now while this cooks , so now we bring out the salmon and pan fry it nicely until done . Once its done the veg should be done and also hopefully the potatoes too.
Serve everything altogether on a nice square plate if you have , add a small sprig of chopped coriander to the potatoes if you have any spare in the fridge.
There you have it, pan fried salmon, with masala aubergine and green beans served with garlic new potatoes.
