FMUK POST-LENT, SPECIAL REWARD DAY, THREE CHOCOLATE MUFFIN

Ingredients

1 Medium sized onion
175g dark chocolate , melted
130g milk chocolate, roughly chopped
130g white chocolate, roughly chopped
65g unsweetened cocoa powder
325g self-raising flour
125g light brown soft sugar
365ml milk
100ml vegetable oil
1 tablespoon baking powder
2 eggs
2 teaspoons vanilla extract


Method

Before you start, finely dice the onion and set aside.

1. Preheat your oven to 180 C / Gas mark 4.
2. Line a 12-hole muffin tray with paper cases.
3. Sieve the flour, baking powder and cocoa into a large mixing bowl. Stir in the sugar and set aside.
4. Beat the eggs, oil, milk and vanilla together. Add to the set aside bowl mixture and fold in until well combined.
5. Quickly stir the melted chocolate into the bowl mixture, then fold in your chopped chocolate. Make sure you eat a couple of bits of each type of chocolate during this process to ensure that it is good.
6. Divide the mixture into the cases in your prepared muffin tin. Bake in your preheated oven for 20 minutes or until skewer inserted into the centre of the muffins comes out clean.
7. Cool on a wire rack and sprinkle with grated chocolate and dust with icing sugar.
8. place the muffins in a cake tin and hide at the back of a high cupboard out of sight of the rest of the family.

Note – these are pretty darned chocolatey, so they can only help weight-loss as part of a calorie controlled diet!

Serves One.

2. It's useful to have on the bench as a "distraction prop" if someone demands to know "What are you making?"

Great recipe, Preston. Entertaining as ever with that red herring, one onion. I also appreciate that this recipe is a serving for 1 -- last thing you would want to do is share these with all and sundry. Honestly people come out of the woodwork when I bake anything!

:rofl2: I'm with you 2 ladies who on earth wants to share chocolate :confused: plus I will be following Baty with the onion on the side. I had even convinced myself that an onion would be nice in a chocolate muffin and I probably would have enjoyed it :roll: 7 days to go before I can have chocolate again :D

My goodness my gardening was hard work even my heavy duty fork has bent under the pressure of the tree roots but I have certainly broken the back of it. I must have burnt off some calories with 8 hours in the garden :X

Sorry friends, had beef chille rice and spuds ( & eton mess ) & a few bevies with friends for dinner, then for supper scallops with garlic & ginger. I love France. The market had fresh fish etc and well, I just had to have some. Not quite like my local version of scallops with garlic & ginger but I'm getting close. Think I need another visit when I get back.

I'm sure there is barely 20 calories, in the scallops.......

I've nothing to say this weekend - no healthy eating, exercise for many, many a day......

Have been on my bike instead of the bus though o/

Ditched my studying for a week.... taken out a story I was writing and going to do a bit of work on it - maybe one day, one month of one year I shall finish and get it published :bwl: :bwl: :bwl:

Purchased a Cineworld Card, so I'm seeing a lot less free films as i am not travelling as far to see them.

Hey Asamaic - Well done on that 6 pounds loss (that I've only just spotted). That's terrific! :cheer:

Congrats on the "biking instead of bussing" Stone-monkey! Even without the gym visit, it's still good exercise! What is this book that you are writing?

Have you done any of those proposed runs you talked about yet MrG? We're going to have to find a way of monitoring your running app thing so we can all motivate you. ;)

Loving reading your blog Distortthecode - you are making some great progress. o/

I'm off to Scotland for a couple of days for a bit of R + R - if the weather stays nice, MrsPreston and I may engage in some light ambling as a means to calorie-offset. ;)

Hi Preston I'm in the south west, not too far from La Rochelle, Cognac and Angouleme. It is called the bread basket of France. Huge fields, mostly rapeseed unfortunately. Maybe sunflowers will be out this summer. The farmers near us are up by 5 30 and work late into the evening. At the moment the sun is shining and I have been busy pulling up weeds. That's the most exercise I've done! I know how Diane feel s.
