Now I want some mushroom and onion stuffed pancakes that are nicely wrapped, sprinkled with shredded cheese and baked golden delicious. Or ones stuffed with riccotta and spinach. Or american-style with mini chocolate chips in the batter and strawberries on top. Oh pancakes, why do you want to mess with my trying to eat healthy?

Oh yummy - the Cafe Below at St Mary Le Bow have pancakes with spinach and ricotta today. Guess where I'm going for lunch shortly? o/
