Pancake Day 16/02/10: Pancake Recipes!!!
As Pancake day is approaching I wondered if anyone has any favorite pancake recipes!!!...pancake fillings...recipes for that perfect pancake etc
I'll start!
Fat American Pancakes:
INGREDIENTS
190 g all-purpose flour (6.70 ounces)
10 g baking powder (2 teaspoons)
6 g salt (3/4 teaspoons)
10 g white sugar (2 teaspoons)
295 ml milk (possibly add another 1/4 cup if you like it thin) and brought down to room temp
1 egg
45 g butter, melted (1.58 ounces) and brought down to room temp
Vanilla
DIRECTIONS
In a large bowl, sift together the flour, baking powder, salt and sugar. Make a well in the center and pour in the milk, egg and melted butter; mix until smooth. Mix in 1 1/2 teaspoons vanilla to the batter.
Heat a lightly oiled griddle or frying pan over medium high heat. Pour or scoop the batter onto the griddle, using approximately 1/4 cup for each pancake. Brown on both sides and serve hot.
Edit: I also like to add cinnamon powder to the batter sometimes!

Eek, when is it? I hadn't realised it was imminent. I've just made a large mocha cake so we'll have to hurry up and work our way through that if we're to have pancakes for dessert instead, whenever it is.

Thank you. That's what comes of multi-tasking - too busy trying to cook dinner to read the post properly. But now I do know, it's good news: it's about 10 days off yet.

My Mum makes the best pancakes in the world. Unfortunately I haven't got the recipe.

Best Pancakes in the world aye!! It is a shame you do not have the recipe for them Beate!
Anyone been to 'My Old Dutch Pancake House'? There are two or three of them in London...I love their savory pancakes. Especially the one filled with chive sauce and salmon...very nice!

last few years i have only brought the packets to make yourself or as Andrews said the ready made ones and just heat them up. family is a big fan of pancakes we have them all year round :)
favouite fillings are:
lemon sugar (classic)
Nuttella choc spread
Jam
ice cream syrup (especially the toffee)
all off the above in one pancake

oh I love pancakes. as a Dutch girl, we eat them with anything and everything!
My favourite savoury pancake:
Mix together smoked salmon, cream cheese, any spices you like (I like chives) and combine to make a pasta (use a food processor for this).
Make very thin pancakes and let them cool.
Spread a thin layer of the salmon paste on each pancake. then roll them up and tightly wrap them in cling film. leave to set in the fridge for a while (overnight is best).
Take the pancakes out of the cling film, trim the edges, then cut diagonal slices. They look lovely and taste delicious!
Also lovely are pancakes with summer fruit, a little bit of icing sugar and ice cream. Yum!
Favourite in Holland: pancake with bacon, or with cheese. My OH particularly likes them with bacon and 'stroop' (a very dark syrup).
