Sorry for my absenteeism without a permission to be absent slip :nono: I ended up working late yesterday colleagues giving patients appointments after I finish work but not actually booking into my clinic hence about to go home and 3 patients sat outside my door :wall: then more or less went straight to the cinema. Been working this morning and once again been to the cinema this afternoon. I have been out on a walk for an hour after work so exercise done now need to eat a healthy meal with lots of vegetables before I head off for a night out with the girls from work hopefully not eating :cross: :roll:

Soooooooo..... where to start ! :D

Its been a way while since i properly posted on here , but post ramadhan have just been super super busy. Ramadhan was good for me as it always is, i had a lot of time away from the world and found myself again as i always do in this month. Now I am back into the swing of things with a new found vigour and motivation. Work especialy has been very busy now which is taking up a lot of my time but i am still going to the gym and working out and still training 5/6 days a week. Normal eating habits and timings have resumed so typically i am having porridge and protein shakes for brekkie straight after my morning workout , fruit and yoghurts for mid morning and mid afternoon snacks , lunch and dinner are home foods , one thing we have sarted to do at home is incorporate more veg into our main dishes , so when we make say chicken curry then we add in vegatbles into the curry too , recently been having a lot of aubergine added into curries and also casserole type vegetables, i have always ate reasonabally healthy but never really ate as much vegetables as i should , but now this has changed and i can proudly say that i am eating (and enjoying !) a lot more vegetables !

So staying on the vegetable side of things here is a curry recipe as promised for preston1990 !


My suggestion if your going to want to eat healthy curries regualrly then to make the following base for the curry then pour them out into ice cube trays and freeze it . This way its frozen in small invidual protions and you can take out as much or less as you need whenever you cook.

Dice up on large onion and fry in olive oil or corn oil, whilst it is frying add 1 teaspoon of whole cumin seeds,. Once the onions are golden brown add 1 cube of frozen garlic and 1 cube of frozen ginger (http://www.tesco.com/groceries/Product/ ... =265762135 , get the garlic version of this too) ,fry these with the onion until everything is brown (add little bit of water if things start sticking to the pan ) once browned add 1 table spoon of tomato paste and some water to help everything bind together and keep stir frying, once a good consistency has ben achieved add 1 teaspoo of chilli powder , 1 teaspoon coriander powder , half teaspoon of turmeric powder and 1 or 2 teaspoons of salt (according to taste) give it a mix and crack some black pepper into the mix too , keep frying and as much water as you need accoridn to whats texture and consistency you like .

This is now the base of all your future curries. You could pop this into a blender and compltely liquidize it and then add it into the ice cube trays and freze or you can just freeze as is (but make sure its cooled down completely before freezing !)

This is your curry sauce now you can tweak it however you want, more chilli more garlic etc (or less!) to this base you can add anything , chicken lamb veg fish , once the whatever meat or veg you choose has cooked , add into the curry some fresh green chilies according to taste and garam masalal powder at the end. Garam masalal powder amount depends on how much meat or veg you used and how much curry you made, but as a rule of thum its 1 teapoon per 1kg of meat or veg.

This recipe was for 1 kg of meat, so use ingrdients amount accordingly .

And freezing the sauce into individual portions is a real good tip as whenever you fancy it you just pop out as much sauce from the trays as you need , melt it down and cook it in a pan as is and just add meat or veg (or both) !

Serve with rice - for luxury cook the rice in chicken stock instead of water , or just cook it in plain water with salt .

Can even serve with wholemeal pitta breads or wholemeal tortillas

Moviemannn, thank you so much for taking the time to post this fantastic recipe up for me. I'll go and b*y all the stuff over the next couple of days and report back when I've made it. It sounds like it will be great and as you say,just the thing to store in the freezer and quickly add to meat and vegetables when making up curries. o/

You've obviously never heard me sing :blink: :roll: got my weights at the ready and will be starting shortly just waiting for my breakfast to go down. Hope you're enjoying your bike ride o/

As for moviemann's curries they are wonderful and very quick and easy to make, don't forget to b*y the herbs from the Asian isle as it saves a fortune - I got them on offer last year 4 for £2 but still good value at this price eg http://www.tesco.com/groceries/Product/ ... =259685788 . What a brilliant idea re freezing the base for the curry sauce and I will certainly be doing that as DD goes in 2 weeks so there will be lots of cooking for one so will save lots of time (this my backfire as I might end up with too much time on my hands - I can't just come home from work and sit for the evening :noo: ).

Menu of the day:
Fruit and fibre (300 calories)
Jacket potato with ratatouille (350 calories)
Pumpkin, lentil and pea curry (homemade) with a chapati (400 calories) Rhubarb pie and custard (400 calories as treat day). I know this doesn't match but we're emptying the freezer ready to do a pre Christmas defrost so eating up all my frozen meals.

Hopefully if I get time later will go blackberry picking - been out all weekend so need to do lots of housework and get stuff for DD for going to university ie loads of toiletries etc whatever will fit in the back of a car to get her started plus I'm out every night this week (no where exciting apart from the cinema - working late a couple of nights, the dentist and the vets plus want to make time for exercising) so need to get organised as going away on Saturday.

I on the other hand was in tremendous voice for some of my bike ride. Those bits when no-one else was around :shifty:

Now I know that this is going to sound like a made up story but I promise you that it is true. I most definitely did stop singing when I swallowed the bee this morning. :blink: I say bee but it might have been something else. All I knew was that something pretty large had flown into my open mouth as I cycled along. It was like having a thistle head in your mouth, all spiky and hairy. I managed to spit it out almost immediately but then noticed that the side of my tongue towards the back was incredibly sore. I honestly thought I'd been stung and had visions of my tongue swelling up and me choking to death by myself in the middle of the countryside :mrgreen:

I can laugh about it now :p , but I was more than a tad concerned at the time. 8O The soreness has all but disappeared now :D


TODAY'S MENU

1. Porridge, skimmed milk, blackberries - still the original lot though almost finished now.

2. The Jamie soup that I was supposed to make yesterday but didn't. Edited to say still didn't make it - had a prawn pasta layered salad that needed using up.

3. Scottish salmon fillet with spinach and noodles. Sweet chilli sauce.

4. Tea and toast.



Will be shopping this afternoon for Biggins' Ryvitas, Moggers' Matzos, and Moviemannn's curry ingredients. Thanks for the "Asian Isle" tip Diane. :kiss:

And...well done Diane for the excellent "colour bridging" of your vegetables and fruit in your today's menu. Positively artistic!
