Soooooooo..... where to start !
Its been a way while since i properly posted on here , but post ramadhan have just been super super busy. Ramadhan was good for me as it always is, i had a lot of time away from the world and found myself again as i always do in this month. Now I am back into the swing of things with a new found vigour and motivation. Work especialy has been very busy now which is taking up a lot of my time but i am still going to the gym and working out and still training 5/6 days a week. Normal eating habits and timings have resumed so typically i am having porridge and protein shakes for brekkie straight after my morning workout , fruit and yoghurts for mid morning and mid afternoon snacks , lunch and dinner are home foods , one thing we have sarted to do at home is incorporate more veg into our main dishes , so when we make say chicken curry then we add in vegatbles into the curry too , recently been having a lot of aubergine added into curries and also casserole type vegetables, i have always ate reasonabally healthy but never really ate as much vegetables as i should , but now this has changed and i can proudly say that i am eating (and enjoying !) a lot more vegetables !
So staying on the vegetable side of things here is a curry recipe as promised for preston1990 !
My suggestion if your going to want to eat healthy curries regualrly then to make the following base for the curry then pour them out into ice cube trays and freeze it . This way its frozen in small invidual protions and you can take out as much or less as you need whenever you cook.
Dice up on large onion and fry in olive oil or corn oil, whilst it is frying add 1 teaspoon of whole cumin seeds,. Once the onions are golden brown add 1 cube of frozen garlic and 1 cube of frozen ginger (
http://www.tesco.com/groceries/Product/ ... =265762135 , get the garlic version of this too) ,fry these with the onion until everything is brown (add little bit of water if things start sticking to the pan ) once browned add 1 table spoon of tomato paste and some water to help everything bind together and keep stir frying, once a good consistency has ben achieved add 1 teaspoo of chilli powder , 1 teaspoon coriander powder , half teaspoon of turmeric powder and 1 or 2 teaspoons of salt (according to taste) give it a mix and crack some black pepper into the mix too , keep frying and as much water as you need accoridn to whats texture and consistency you like .
This is now the base of all your future curries. You could pop this into a blender and compltely liquidize it and then add it into the ice cube trays and freze or you can just freeze as is (but make sure its cooled down completely before freezing !)
This is your curry sauce now you can tweak it however you want, more chilli more garlic etc (or less!) to this base you can add anything , chicken lamb veg fish , once the whatever meat or veg you choose has cooked , add into the curry some fresh green chilies according to taste and garam masalal powder at the end. Garam masalal powder amount depends on how much meat or veg you used and how much curry you made, but as a rule of thum its 1 teapoon per 1kg of meat or veg.
This recipe was for 1 kg of meat, so use ingrdients amount accordingly .
And freezing the sauce into individual portions is a real good tip as whenever you fancy it you just pop out as much sauce from the trays as you need , melt it down and cook it in a pan as is and just add meat or veg (or both) !
Serve with rice - for luxury cook the rice in chicken stock instead of water , or just cook it in plain water with salt .
Can even serve with wholemeal pitta breads or wholemeal tortillas
