It all depends on your mood on the night and also what kind of films you particularly enjoy watching.
Personally I love X Men: First Class and The Impossible. X Men more cos I prefer that type of genre but The Impossible was not too shady either. I didn't enjoy Flight. It was stunning for the first 10 minutes and then dragged trying to tell a story about a character I didn't really care about or sympathise with. I haven't seen the others but I do know An Affair To Remember is a classic.

Don't watch 'Good day to die hard' on any day. Such an appropriate title for if you DO watch that movie.

An Affair To Remember is one of personal favourites - romantic, touching, beautiful classic with great cast. So if you're in a mood for that, you can't go wrong choosing this.
However, if you're looking for something more action-oriented, X Men is the way to go. Fun and enjoyable, it seems even throughout. Flight by comparison starts off on a high note and goes down from there for me climaxing in a much too hollywoody manner. And Die Hard has no high, it's just the lowest of the franchise.

X-men First Class (great film and a good intro to the whole X-men series)
Impossible (will bring a lump to your throat at the very least),
Expendables 2 (action flick with no real story, nice with some snacks and a couple of beers if you want to relax)
